Cheesecake Tarts Recipe
Ingredients
Pastry cases ( same as apple tart cases)
200mls fresh cream
200mls light cream cheese
200mls light sour cream
2tsp icing sugar
1 tsp vanilla essence
1 tin of boysenberries
1 tblspoon brown sugar
1tsp arrowroot or cornflour
1tbl spoon cold water


Method
In a small saucepan place the tin of berries and the sugar and bring to the boil. Cook for a few minutes and then combine the cornflour and water and add to the berries. Cook for 1 minute it should be vey thick if not add some more cornflour mix. Leave to cool.
Beat the cream in a bowl until forms a peak but not too whipped. In a separate bowl combine the cream cheese ,sour cream sugar and vanilla and whisk ontil smooth. Add the two bowls togeather and whisk until it thickens but not over whipped.Spoon into pastry cases. Place a very small spoon of the berry mix on the top. Serve immediately.
