Chicken Casserole Recipe
Ingredients
2 Large skinless Chicken Breasts
2 400 grm Tins Tomatos
3 large onions ( chopped into 2cm chunks)
2 large Carrots ( chopped into 2cm chunks)
2 Courgettes ( chopped into 2cm chunks)
8 large button mushrooms ( quartered)
2 teaspoons Italian Herbs
Salt and pepper to taste
1 tablespoon of oil
1 litre of water
2 cups of white wine
2 tble spoons arrowroot
Method
Dice the Chicken into 2cm cubes and brown in a pan add the diced onions and
cook for 2 minutes. Add the carrots,courgettes and mushrooms and brown for 3
to 4 minutes.season with the herbs, salt and pepper. Add the tomatoes and the
water and wine and bring to the boil. Place in a casserole dish or slow cooker
and cook for at least one hour on 180°C or high in the slow cooker for 3
hours. When cooked mix 2 table spoons of arrowroot and a little water add to
the casserole then bring to the boil for 1 minute to cook the arrowroot. Serve
as soon as the casserole has thickened.
