Chocolate Coffee Muffins
Ingredients
1and ½ cups Sugar
3 large eggs
200 grams butter or Margarine
3 cups Plain Sifted flour
4 tablespoons cocoa or 75 grams chocolate (Dark)
3 tsp baking powder
1 heaped teaspoon instant coffee
100 mls hot water
Method
Heat oven to 180°C fan or 190°C normal oven . In a cup mix the coffee
and hot water leave to brew. In a bowl place the Butter or marg and the sugar
beat with a wooden spoon until light and creamy. Add the eggs one at a time
and beat with a wooden spoon until the mix has thickened if it looks curdled
add a tablespoon of the flour and beat it in. Next, add the flour, cocoa or
melted chocloate and the coffee, fold until mixture is smooth. If it looks too
dry add a little trim milk.
Place the muffin cases into the muffin tins and fill the cases ¾ full.
Should make 24.
Place in the oven for around 15 minutes check with a skewer when it comes out
clean they are ready.
You can also put cream cheese in these if you want. You may freeze individually
and use from the freezer. These are also great served with Passionfruit Pulp
drizzled over them just before serving.
I find with all muffin recipies that each time I make them I slightly reduce
the sugar content until they are at a healthier level try this on your family
and they will find they won't like bought ones as they are too sweet. Make sure
the reduction is subtle each time until you decide they are right for you.
