Cous Cous Salad Recipe
Ingredients
! cup of CousCous
1cup of boiling water
1 teaspoon og GaraMasala
1 each of red and green peppers
1 large carrott finely diced
1 large roasted pepper diced ( in countdown where the gerkins are kept)
½ a cucumber not peeled unless it is tough
Dressing
100 mls balsamic Vinigar
100 mls vegetable oil
1 teaspoon ground cumin
1teaspoon ground paprika
1 teaspoon hot english mustard
1 teaspoon crushed garlic
In a jar place all the ingredients except the oil and shake well add the oil and shake again. This is great made the day before to get the flavours going.


Method
Ina melal bowl or pot place the Cous Cous in a cup place the boiling water and the Garam Masala and mix. Add to the Cous Cous mix quickly then cover with a lid or cling wray for 5 minutes.With a fork mix the Cous Cous until light and fluffy then add all the diced and chopped ingredients then add some dressing and mix. It keeps in the fridge for a good week.
