Ingredients
2 large oranges quartered and deseeded
1 cup sugar
2 large eggs
½ cup trim milk
200 grams melted butter
3 cups plain flour
2tsp baking powder
2tsp baking soda
Small tub Very Light Cream Cheese
Passionfruit pulp ( to drizzle over the top optional)
Method
Heat the oven to about 190°C fan bake, 200°C for normal oven.
Melt the butter either in the microwave or on the stove. Into a food blender
place the chopped oranges including the peel( but check for seed and remove
them) add the sugar and blend until the orange is chopped fine. Add the eggs,
milk and melted butter and blend until combined. Sift together the flour baking
powder and soda add to the mixer and mix in short bursts until mixed, only about
30 seconds is enough.
Place into muffin trays lined with muffin cases, should make 24. only half fill the cases add a very small amount of cream cheese then top up the cases with more mixture.
Place in the oven for about 12 -15 minutes check with a skewer after 12 mins if the skewer is not sticky they will be cooked. Remove from the oven and cool in the tins for 5 mins then place onto a cooling rack.
These are great wrapped and frozen. When serving at home defrost and then drizzle
a little passionfruit pulp just before serving
