Sasuage Casserole Recipe
Ingredients
6 large Sasuages
2 400 grm Tins Tomatos
3 large onions ( chopped into 2cm chunks)
2 large Carrots ( chopped into 2cm chunks)
2 Red Peppers ( chopped into 2cm chunks)
8 large button mushrooms ( quartered)
2 teaspoons Italian Herbs
Salt and pepper to taste
1 tablespoon of oil
1 litre of water
2 tble spoons arrowroot


Method
Quickly brown the Sasuages in a frypan with the oil remove and chop into thirds add the diced onions and cook for 2 minutes. Add the carrots, Peppers and mushrooms and brown for 3 to 4 minutes. Season with the herbs, salt and pepper then add the tomatoes and the water and bring to the boil. Place in a casserole dish or slow cooker and cook for at least one hour on 180°C or high in the slow cooker for 3 hours. When cooked mix 2 table spoons of arrowroot and a little water add to the casserole and bring to the boil for 1 minute to cook the arrowroot. Serve as soon as the casserole has thickened. You can add any other vegetables to this casserole if desired even diced potatos.
