Stuffed Potatos Recipe
Ingredients
6 Large Potatos
4 lge Button Mushrooms diced
1 large Onion diced
2 rashers Sreaky Bacon diced
Salt and Pepper to taste
½ cup grated Cheese


Method
Bake potatos in either oven or microwave until cooked. In a frypan cook the Bacon and onions until browned add the mushrooms and cook for a futher 5 minutes.
Halve the potatos and scoop out the contents being careful not to break the skins. In a bowl place the potato filling and the contents of the pan and combine. Spoon back into the potato skins and top with the cheese. Place under the grill to brown and serve either hot or cold. This can be a very quick and nutritious meal. Serve with a salad or anything else you like.
